Raw Valentine Starter
HEART “BEET”
A refined dish with a touch of beauty, always adds that “special something” when you are eating with a loved one. Check out this simple starter with glorious sex appeal!
TOOLS
- A sharp knife
- A heart mould to make the shape of a heart
- A blender
INGREDIENTS FOR THE SALAD
- A handful of sprouts (I used spicy tasting radish sprouts)
- 4 very thin slices of red beet
- A few drops of organic cold pressed extra virgin olive oil
INGREDIENTS FOR THE “CHEESE” FILLING
- 1 C of macademia nuts or peeled almonds
- A small piece of shallot (start with a little bit, you can always add)
- 1 TBSP lemon juice (to taste)
- 1/4 tsp Celtic sea salt or Himalayan salt (to taste – all nuts taste different)
- If you don’t mind garlic… 1/2 clove of squeezed garlic (take the heart out for less odor)
- A few TBSP of spring water, just enough to make a smooth texture (not running!)
THE MAKING OF …
- Place some sprouts in the middle of each plate
- Push 4 hearts out of the thin slices of red beet on a hard surface
- Place one heart slice in the middle of the sprouts
- Blend the ingredients of the “cheese” into a solid, smooth paste
- Taste and adjust to your own taste
- Put some of the cheese on top of the hearts
- Close the hearts with a second slice of “heart beet”
- Now put a few drops of olive oil on the heart to make it “glow”
- Finish with a flower or red rose on the plate
- Eat with Love!
TIPS
- You can use your own filling, a leftover of a dressing, a pesto…
- Fermented cheese is lovely as a filling, too if you have some
- A nut or seed paté works fine too
- You can use the shape you took the heart from, make it round and fill it up with a white heart…
